Alstede Fresh Kale & Brown Rice
Ingredients:
3 cups of cooked brown rice
3 leeks sliced and cleaned
3-4 cloves of garlic chopped
1 bunch of kale
Olive oil, Vegetable broth as needed
Kosher salt and pepper to taste
Instructions:
Prepare brown rice according to package directions.
While the rice is cooking slice and clean the leeks and chop the garlic.
Remove the tough rib from the kale and break or chop into small pieces. Clean the kale and drain in a colander.
Heat a couple of Tablespoons of olive oil in a medium- large sauté pan over medium heat.
Add the leeks and allow to soften. Do not let the leeks brown. When leeks are tender add the garlic and sauté for a few minutes longer to cook the garlic. The kale will have moisture from washing. Top the leeks and garlic with the kale, kale will have enough moisture to start steaming. Sprinkle the kale with salt. Cover the pan and allow the kale to steam over low heat.
Stir the leeks and garlic through the kale and add a little broth if the pan is dry and it is needed to complete steaming. When the kale is tender, add the rice to the vegetables and gently stir through.

Farm Kitchen Tip – This is a great recipe to make in bulk and have leftovers to use for stuffing peppers or for making a stir fried rice with egg. This dish also freezes well. This is an easy simple meal that everyone will love and not only is it delicious it’s also nutritious. Adding freshly grated parmesan cheese to the finished dish enhances the flavor. Toasting and slicing 2 Tbs of almonds for garnish also adds a nutty crunch to this meal. You may add more ingredients you have on hand such as mushroom, spinach or cooked meat to enhance the flavor and nutritional value of this meal.
