Kohlrabi Slaw

1-2 kohlrabi
1 c fresh radishes
1 T white wine vinegar
1 t sugar
2 T chopped fresh parsley
2 T olive oil

 

Peel the kohlrabi, shred the kohlrabi and radishes in the food processor or with a grater.

Mix the vinegar and sugar until the sugar is dissolved.

Whisk in the olive oil and add the parsley

Toss with the shredded vegetables

Salt to taste

Chill for 1 hour, Serve
