Ingredients:
8- 10 cups mixed Alstede Fresh salad greens
2 cups of sliced Alstede Fresh strawberries
1/4 cup red onion, very thinly sliced
1 cup sugar snap or snow peas cut in 1/2
(can substitute blanched, cut green beans instead)
3/4 cup crumbled feta or goat cheese
1/2 cup toasted sliced almonds, walnuts, or pecans
Raspberry Vinaigrette:
1/2 cup extra-virgin olive oil,
3 T raspberry vinegar
juice from 1/2 lime
1/2 tsp. Dijon mustard
salt & pepper to your taste.
Instructions:
Tear salad greens into a large bowl add the remaining ingredients.
Prepare the dressing:
Whisk together the olive oil, vinegar, lime juice and mustard pour over the salad ingredients.
Sprinkle with salt and pepper to taste.
