INGREDIENTS
8- 10 cups mixed salad greens
2 cups of mixed berries, strawberries, raspberries, blueberries
1/4 cup red onion, very thinly sliced
1 cup sugar snap or snow peas cut in 1/2
¾ cup crumbled feta or goat cheese
1/2 cup toasted sliced almonds, walnuts, or pecans
RASPBERRY VINAIGRETTE
½ cup extra-virgin olive oil
3 T raspberry vinegar
Juice from ½ lime
1/2 tsp. Dijon mustard
2 t honey or to taste
Salt and pepper to taste
DIRECTIONS
Tear salad greens into a large bowl add the remaining ingredients.
Prepare the dressing: whisk together the olive oil, vinegar, lime juice honey, and mustard. Pour over the salad ingredients & gently toss. Sprinkle with salt and pepper to taste. Serve immediately.
