Apple Pecan Cake
1 ½ medium apples peeled, cored and
Cut into ½ “ dice
1 c sugar
Mix together:
Add ¼ c of melted butter
¼ c vegetable oil
1 beaten egg
Blend well
Measure into a separate bowl:
1 1/4 c flour
1 t baking soda
1 t cinnamon
1 t allspice
½ t salt
Preheat the oven to 350,
Mix dry ingredients together well. Blend into the apple mixture.
Stir in 1 c roughly chopped pecans or walnuts.
Batter is very thick.
Spoon batter into a greased and wax paper lined 8” square pan. Spread evenly.
Bake 45-50 minutes. Check with a cake tester.
Set on a wire rack to cool. Cool. Turn out. Peel off wax paper . Cut into squares.
