Ingredients:
1 leek or half large onion sliced
2-3 garlic cloves, chopped
1/4 – 1/2 bell pepper green, red, or orange, diced
¾ lb. Alstede Fresh Brussels sprouts, cut in half
Olive oil
Kosher salt and Pepper to taste
Instructions:
Preheat the oven to 425 degrees. Heat olive oil in an oven safe, sauté pan over medium heat. Add the leek or onion, garlic, and pepper. Cook until slightly tender.
Remove from the pan. Add a little more oil as needed. Sauté the Brussel Sprouts until starting to become tender and a little browned on the edges.
Add the leek, garlic, and pepper, back to the pan with the sprouts, toss to combine. Arrange so that the vegetables are in a single layer.
Roast in the center of the oven for 10-15 minutes. Edges should be browned; sprouts should be tender. Sprinkle with salt and pepper and serve.
Farm Kitchen Tip: Brussels Sprouts are a wonderful way to eat in season and eat healthfully. These flavorful sprouts can be incorporated in a variety of ways.
