1 lb. fresh green beans
1 red onion, thinly sliced
4 cloves garlic, chopped
1 Tablespoon fresh herb of choice ( we like thyme in this recipe)
2 teaspoons olive oil
Pink Salt
1 tsp smoked paprika
Trim beans and parboil for 3-4 minutes until tender crisp. Drain water and plunge beans in a ice water bath to stop the cooking.
In a cast iron fry pan or saucepan, melt butter add onion and garlic and cook over medium low heat garlic may get golden brown, do not allow to burn. Stir occasionally until onion is just tender Stir in beans, seasonings and heat through. Serve as side with a protein.
