Peach Cake with Alstede Peaches

Congratulations to Gerri Minardi, her peach cake is the winning recipe in the  Jersey Fresh Recipe Contest this past week!

1 cup, plus 1 tablespoon flour,
1 teaspoon baking powder,
1/2 teaspoon salt,
Combine dry ingredients,
2 eggs,

1 teaspoon vanilla,
3 to 4 Alstede’s homegrown peaches, peeled & sliced,
1/4 cup apricot preserves, 1 tablespoon orange liquor, or instead of this glaze, I used raspberry liquor, “Chambord”, & raspberry jam.

Preheat the oven to 350, Grease a 7” spring form pan,

Cream  1/2 c butter and  1/2 cup of sugar till light and fluffy

Add eggs one at a time, beat well and mix in vanilla.

Gradually add dry ingredients and mix well

Spread the batter evenly into the pan, Arrange peaches in a spoke fashion

Combine 2 T sugar, 1 T flour and 1 t cinnamon and sprinkle over the peaches

Bake 50-55 minutes.

Heat liquor of choice with jam.  Brush over the peaches.

Serve
